Aurum Mid Chicken is a mature egg-laying hen, sourced from our partnered Victorian egg farms and prepared as a whole bird with head and feet on.
Raised for a minimum of 600 days, this mature hen offers a very different eating experience from younger poultry. The meat is leaner, more structured and deeply suited to slow cooking, while the bones, head and feet contribute excellent stock value, collagen and savoury depth.
We present Mid Chicken as a whole bird with head and feet on to honour the full life of the bird and to showcase the quality of its time on farm. This format also reflects traditional whole-bird cooking, where every part has value — from the meat for soup, braising and shredding, to the bones, head and feet for richer broth and stock.
Mid Chicken is best suited to customers who appreciate traditional cooking, nourishing soups, long simmering and whole-bird preparation. It is ideal for slow soup, master stock, herbal broth, congee, braised dishes and family-style recipes where flavour, collagen and broth depth are the focus.
