Aurum Signature Corn-Fed Duck (Size 20) is one of our most celebrated poultry selections, known for its cherry-red duck meat, rich duck flavour and delicate layer of natural duck fat.

Raised with a corn-fed diet, this duck delivers a deeper, more distinctive eating experience than standard poultry. The meat carries a richer, lightly gamey character, while the natural fat renders beautifully during cooking, helping create crisp skin, tender meat and a rounded savoury finish.

This duck is highly versatile across both classic Asian and modern Western applications. It is especially suited to dry ageing, oven roasting, Cantonese-style barbecued roast duck, master stock braising, charcoal grilling, confit, duck ragù, duck curry and chef-led centre-of-table dishes.

Aurum Signature Corn-Fed Duck is raised in collaboration with dedicated partnered local corn-fed duck farmers in Southern NSW, through a farming and feeding programme curated by the Moorabool Valley Duck Farm team. The programme is designed to support consistent quality, natural fat development and the distinctive eating profile of Aurum Corn-Fed Duck. With expanded growing space to enhance quality and production consistency, the ducks develop their signature cherry-red meat, rich duck flavour and delicate natural fat.
