Aurum Poultry Co. has teamed up with Chef Jo Chan (Atelier Josun) to launch a limited-edition mooncake box ($59/box) to celebrate this year’s Moon Festival. Chef Chan creates two exclusive mooncakes showcasing the unique characteristics of Aurum Poultry Co.’s Moorabool Valley Salted Duck Egg with both traditional and innovative flavours – white lotus seed and custard. The first, a refined twist on the classic mooncake dessert, blends sweet lotus seed paste with the rich, savoury notes of salted egg yolk and the second, a playful twist on the iconic custard mooncake – a 1986 sensation that continues to captivate Hong Kong locals each Moon Festival, where Aurum Poultry Co.’s Moorabool Valley Salted Egg Yolk is used matching with the custard base, offering a perfect blend of salty and sweet flavours. ABOUT THE PRODUCER
Originating from Hong Kong, Chef Jo Chan is the founder of Atelier Josun. The word “Jo-sun” means “good morning” in Cantonese, and is also a warm greeting to family, friends or even strangers. A special collaboration with Cardwell Cellars, Atelier Josun is fascinated in delivering exceptional dishes flavours using seasonal produce, ferments, teas and other Cantonese elements which reflect nature, Cantonese culture and passion to push the boundaries of what pastry represents. Having trained Noma in Copenhagen, Chan returned to Australia to hone her skills at Restaurant Gaea and its sister coffee shop, Calere, where Atelier Josun was founded, offering pastry creations of exception.
