Chicken (Fook Wong)
The Fook Wong chicken name, created by Aurum Poultry Co. and comes from a merging of the Chinese words ‘fook’ meaning happiness and ‘wong’ meaning to feel royal. It is this feeling that Aurum strives to achieve when customers enjoy its products, as well as being an ode to the founding brothers’ name.
Asian cooking revolves around bringing joy and good health to diners. In many ways, our Fook Wong Chicken mirrors such philosophy, as the hybrid breed leads a happy, “slow” life that gives them less fat but more flavour and collagen. While the chicken industry-standard lifetime is 42 days from hatching to processing, our Fook Wong Chickens are grown out to between 100 to 120 days to develop muscle, to allow the legs and breast to develop tone, colour and texture. At the same time, the bones are strengthening, becoming harder. Stronger bones and more developed muscles make a huge difference in the flavour of Aurum poultry.
